This recipe for Wild Turkey Thai Curry is quick and delicious! Don’t be intimidated to try experimenting with all of the flavors in this recipe. Substitute turkey for your favorite game meat and add some of your favorite spices.
This is one of my family's go-to’s and it's sure to become one of yours as well!
Ingredients:
1 tsp olive oil
1 red bell pepper, deseeded and chopped
1 yellow bell pepper, deseeded and chopped
2 cloves garlic, peeled and minced
1 tsp minced ginger
1 tsp lemongrass paste
2 cups cubed turkey
2 tbsp red Thai curry paste
14oz can coconut milk
¼ cup chicken stock
1 tsp brown sugar
1 tsp fish sauce
Juice of 1 lime
Small bunch of chopped cilantro
Directions:
Cook peppers in olive oil until tender.
Add turkey until cooked thoroughly.
Add garlic, ginger, and lemongrass paste. Stir for a minute and then add in your curry paste.
Mix curry mixture with the turkey and veggies.
Allow the curry to cook for a minute or two to blend well.
Add coconut milk and stock and allow it to come to a simmer. Simmer for around 10 minutes.
Stir in the brown sugar, fish sauce, and lime juice.
Add cilantro and serve over rice!
